The wonderful meat of Fattoria il Palazzo

A splendid organic beef farm, consisting of over 400 hectares of land mostly used for grazing Limosino cattle, with a total of about 250 animals.

A hilly terrain located at an altitude of 780 metres on the slopes of the Tuscan-Emilian Apennines managed by Valeria Bruni Giordani -our friend Valeria- fenced off and equipped with watering points consisting of controlled natural springs to ensure maximum freedom of grazing. In fact, the farm makes extensive use of natural grazing, following a precious and respectful method for the entire life of the animals, which can thus move and eat outdoors from April until the autumn without the need for any type of food supplement.

The animals destined for fattening are then fed during the stable months - in large stalls with access to the adjacent meadow - using dry fodder (grasses and legumes) and cereals (barley) produced directly and solely on the farm itself using strict organic methods.

The result is a happy life cycle that follows ancient and natural rhythms for the animal and a truly unique meat of exceptional, indeed rare, quality that we bring to our tables in dishes that bring out its incredible flavour and extraordinary tenderness. Breeding according to the organic system, in fact, means conducting a breeding that is respectful of the animal, the environment, but also of the consumer.
