The Muscovy duck is an ancient traditional breed from European countryside, known for its longer growth times, which allow the development of a prized animal with meat celebrated for being particularly flavorful, firm, and lean.
For this Fuori di Taste event, Cibrèo Ristorante & Cocktail Bar presents an evening fully dedicated to the Mute Duck, featuring favorite dishes such as Peking Duck, Duck Terrine, and Bon Bons, paired with wines and cocktails in the perfect Food Bar event.

Laura Peri, an expert breeder of this duck breed, runs an ethical, small-scale farm that ensures exceptional animal welfare, with ducks raised outdoors and following natural growth rhythms. Her supply chain is extremely short, just the way we like it. From the land to the table, every step is closely monitored, guaranteeing not only the highest quality but also full traceability.
Here, farming is a true cultural choice: the farm is not just a place of production but a space where seasonal knowledge, skills, and traditions are preserved, with total attention to food and culinary excellence. Thanks to the direct collaboration with chefs, the raw ingredients are nurtured with haute cuisine in mind, creating an open dialogue between grower and kitchen.

The Chefs’ Interpretation:
Executive Chef Oscar Severini and Resident Chef Gabriele Avanzi transformed the Silent Duck into these signature finger foods:

Bon Bons with Orange Mayonnaise

Pairings:
Guests can choose between the aromatic and spiced cocktail “Quack!” crafted by Bar Manager Vieri Palanti, or a curated wine tasting featuring:

Chianti Classico DOCG “Torre Alta”, 2023

Rocca di Frassinello
Maremma Toscana DOC “Le Sughere di Frassinello”, 2022 (50% Sangiovese, 25% Cabernet Sauvignon, 25% Merlot)

Both wineries, led by Paolo Panerai, represent the most authentic Tuscany. Castellare di Castellina offers a historical yet modern vision of Sangiovese, beyond just red berries. Rocca di Frassinello blends Tuscan tradition with an international perspective.

The Muscovy Duck, a noble and rich ingredient, finds a perfect counterpart in these wines, showcasing two complementary facets of Tuscany: elegance and power. These are not “trendy” wines—they are wines of cuisine, just like Cibrèo’s dishes.
